Yam holds a special place in Ghanaian cuisine, cherished for its versatility and rich flavor. Among the various types like puna, denteh, asana, and serwaa, puna tends to be a favorite for many. Its dense texture and satisfying taste make it ideal for various cooking methods such as boiling, frying, or roasting.
One of the most beloved ways to enjoy yam in Ghana is boiled, paired with flavorful stews. While garden eggs stew and nkontomire stew are popular choices, today we’ll focus on boiled yam with egg stew, a hearty and nutritious combination.
Eggs, renowned for their high-quality protein and nutritional benefits, complement boiled yam perfectly. They are known to boost the immune system and contribute to heart health, making them a nutritious addition to any meal.
To prepare this dish, start by cooking the stew since it requires more time than yam. If you have multiple cooking sources, you can multitask by preparing both simultaneously. However, if you’re limited to one cooking surface, it’s efficient to finish the stew before boiling the yam.
How to prepare yam and egg stew
Prepare the Stew
- Wash and chop onions, fresh tomatoes, and garlic. Blend ginger, a portion of the onions, and garlic together, setting aside some chopped onions for later use.
- Heat vegetable oil in a saucepan over medium heat. Add the chopped onions and sauté until translucent, about 2 minutes.
- Add the blended mixture (ginger, onions, and garlic) to the saucepan. Stir and cook for about 5 minutes until fragrant and slightly reduced.
- Season with your preferred spices, salt, and add tomato paste. Stir well to combine all ingredients. Allow the stew to simmer over medium-low heat for approximately 15 minutes, stirring occasionally. Adjust seasoning as needed.
Prepare the Yam
- While the stew is simmering, peel and dice the yam into small pieces. Wash thoroughly to remove any dirt or residue.
- Place the diced yam in a saucepan and add enough water to cover the yam. Season with a little salt to taste.
- Bring the water to a boil over medium-high heat, then reduce the heat to medium-low. Simmer the yam for 15-20 minutes or until tender when pierced with a fork. Drain the yam and set aside.
Finish the Egg Stew
- Once the stew has thickened and you see oil forming on the surface, it’s time to add the eggs.
- Crack the eggs into a bowl and whisk them thoroughly.
- Pour the whisked eggs into the simmering stew, allowing them to sit undisturbed for about 2 minutes to set slightly.
- Gently stir the stew to incorporate the eggs, breaking them up into smaller pieces. Let the stew simmer for an additional 5-6 minutes or until the eggs are fully cooked and integrated into the sauce.
Serve
- Serve the boiled yam alongside the egg stew, ensuring each serving has a generous portion of both yam and stew.
- Garnish with optional chopped green bell pepper or additional spices for added flavor and visual appeal.
Boiled yam with egg stew is best enjoyed hot and fresh. The tender yam complements the rich and flavorful egg stew, creating a satisfying meal that highlights the culinary traditions of Ghana. Whether prepared for a family dinner or special occasion, this dish offers a taste of Ghanaian culture and the warmth of homemade cooking.
