Ingredients

  • 2 cups Almond flour
  • 1 cup almond milk
  • 1/2 tsp vanilla extract
  • 1 tbsp sugar
  • 1/2 tsp baking soda
  • 1-3 tsp blue spirulina
  • 1/4 tsp salt
  • 2 tbsp peanut butter
  • 1 tbsp popped quinoa
  • 2 eggs
  • blueberries
  • raspberries

Instructions

  • Mix all the dry ingredients in one bowl
  • Mix all the wet ingredients in another bowl
  • Now add the wet ingredients to the dry ingredient and mix well
  • Add 1-3 tsp of blue spirulina to it, depending on how colorful you want your pancakes
  • Spray pan with oil and heat pan to medium-low heat.
  • Now pour batter on and flip when one side has solidified enough to flip.
  • Once you are done with all the pancakes, stack them and top with peanut butter, popped quinoa, blueberries and raspberries.
