How to make Ghana green pepper sauce

Ingredients

  • 8 green habanero peppers
  • 2 large green bell peppers
  • 1 large onion
  • 1 clove garlic
  • 2 thumb size gingers
  • Stock cube/ pinch of salt
  • 4-5 spring onions chopped
  • 1 cup oil of your choice

Method

To make your green pepper sauce, wash all your vegetables properly and cut them into small pieces. Now blend them all together until very smooth. You can either blend with oil or with water. Using water however means that you will have to cook your sauce a lot longer to ensure that all the moisture is out. Blending with oil will cut down the cooking time.

If you blend it with the oil, pour it in a saucepan and it on medium heat. If you used water, pour the oil in your cooking pot and put it on the stove. Once the oil is heated, you can proceed to pour in your blended ingredients. Remember to cover it after and leave it to cook.

When it has cooked for about 5 minutes, add salt to taste or seasoning and let it cook some more. Remember to check on it and stir it often. It should be done in about 10 minutes.

Storage

Green pepper sauce can be stored in the fridge. You can also store it in your kitchen shelf. If you are not going to keep it in the fridge, let it cook a lot longer to ensure that all the moisture is out, that way it will last longer. Just like shito, always remember to use dry spoon whenever you want to use some, wet spoons will introduce water to it and make it go bad fast. Also, the oil helps to preserve it. SO if you wont store it in a fridge, use 2 cups of oil instead of 1.

Ingredients

  • 8 Green habanero pepper

  • 1-2 cups vegetable oil

Instructions

  • Wash all the vegetables and chop them
  • Blend all ingredients together with water in a blender.
  • Pour your vegetable oil into a frying pan and then heat for about 5 minutes.
  • Pour the mixture into your heated oil and then stir
  • Cover it and let it cook for about 5 minutes
  • Add seasoning or salt to taste and continuously stir it so it doesn't get burnt
  • After about 10 minutes, your sauce will thicken and the oil will settle at the top, which indicates that it's ready.
  • At this stage, you can let it cook a little longer to ensure all the moisture is out or you can take it off the stove.
